BACK TO SCHOOL


Well, I have survived the first two weeks back to school. School started on Aug 25th. I only am enrolled for 7 credits, but I don't think I could handle much more than that.

Monday's consists of Modern European history from 6:30 to 8:30. It is taught by Dr. D. Reinki. The best way to describe him is to say Dr. Frasier Crane. He looks and acts just like him, only difference is he HAS hair and it is silver. I am not sure if I am going to like this class because I am not a huge fan of history, but I am sure Chris will help me with any questions I might have, since he graduated with a history degree.

Tuesday night is a fun night. It is my dutch oven cooking class, from 6:30 - 8:30. I have always wanted to be able to cook different things in a dutch oven, but didn't know where to start and what would work and what wouldn't. So this class will do the job. So far it is an amazing class.
The class was broken down into groups of 4 and each group is in charge of cooking a dish for the entire class to try. Each week we will be assigned a new category to cook. The categories consist of: an entree', bread, dessert, side dish and foreign. Even the teacher brings something to cook. This week my group was in charge of the foreign dish, so we made lasagna. It turned out so yummy, but everything that night was yummy. We had chicken enchiladas, cornbread, baked beans, spice apple cake, and apple cobbler. We all decided after our little chow down, that we will all probably gain about 5 - 10lbs from this class. But it is worth the sacrifice of buying new jeans that will fit. Next week my group is tackling the entree'. Can you say sloppy joes with warm and toasted buns?

Thursday is my hardest day, I think the lack of sleep from the week is finally catching up to me. I am up by 5:30, out the door of my house by 6:30 and I don't get home until 10pm. My class is from 7 - 9:30 but with my 20-25 minute commute, it gets me home past my bed time. I love my class so far though, so it makes it worth it.
My class is Psychology 101, the very basic stuff, but I have an amazing Professor Dr. Steven Stephens. I know, it is no wonder why he became a psychologist with that name. But he makes the class so fun. I read the chapters before the lecture and then he explains it so we all can understand what he and the book are talking about.

Wednesday and Friday are designated for ME time, and house cleaning. I have to admit, my house is horrible right now. I have laundry piles and my floors need to be swept, mopped & vacuumed. But the chores will have to wait, until I come back from riding. I am not about to give that up again. Well now I am all caught up with my life and all the ciaos that comes with it. And now everyone else is too.

all of that plus work? you are an amazing woman! i loved psych too! that was my favorite class! good luck with your work load lady...if you need anything you know where to find me.

Wow. That's awesome and stressful! That cooking class sounds like so much fun though...Good luck with it all. Love you!
